Churros - Matt's Munchies
Equipment:
1. Pot for frying
2. Pot for making the dough
3. Mixing bowl
4. Cooling rack
5. Canvas piping bag with a star tip
Recipe: Churros con chocolate
Yield: 4-6 servings
Prep cook time: 90 minutes
Ingredients for the Churros:
- 2 cups AP flour
- ½ # unsalted butter
- 1 cup warm water
- 1 tsp sugar
- ½ tsp salt
- 5 whole eggs, beaten
- Extra cinnamon and sugar
Method:
1. Add butter, water, salt, and sugar to a saucepan and bring it to a boil.
2. Next, add the flour and whisk until there are no lumps.
3. Remove from the heat and in increments of three, add in the eggs while folding them in with a rubber spatula or wooden spoon.
3. Once the eggs are incorporated STOP MIXING.
4. Place the mixture into a large bowl or baking tray and let it cool until it's room temperature.
5. Add the mixture to a canvas piping bag.
6. Preheat a pot of oil to 350F and begin to pipe the churros into the oil.
7. Fry on all sides until dark golden brown.
8. Remove and add directly to the cinnamon/sugar mixture and toss.
9. Set aside.
Ingredients for the Chocolate sauce:
- 1 cup dark chocolate chips
- ¼ cup ripping hot coffee
- ⅓ cup ripping hot heavy cream
Method for the chocolate sauce:
1. Add the chocolate chips to a bowl and pour the coffee mixture over the chocolate.
2. Mix until melted and add the cream until the chocolate has reached a saucy consistency.

    I did this for for a short while as a food runner, cause the executive chef was fired and the sous chef was handling two restaurants at the same time. As a sous chef, it's a pain in the neck to run, but as a food runner???? It's a aneurysm, because a sous can demand and scream, but a runner has to try to push and not piss off the cook behind the line.

    ... and this is why the traditional hierarchy in today's restaurants doesn't work. either the food is too complicated to create in a short amount of time or the menu is too big. Look at the number of cooks and jack sh_t is making it to the pass. Maybe the chef of the restaurant could get on the line. Nah. That would be too much work. It's better to just open restaurant. Nail your name to the place and just repeat.

      Bluefish is a pretty fatty/ oily fish, so the bones aren’t great for stock. As for the collars… I should’ve saved them - they would’ve made a great special 😣

      Unfortunately bluefish is pretty fatty and most of the time bones from fatty fish aren’t great for stock. But definitely could have saved the cheeks!

      No, but each cook has like few dishes assigned, probably 4-5. That's also the reason a good mise en place is essential, every dish has its own ingredients next to each other, so you are not going to mess up
